Is FSMA Driving Food Safety Culture?

We were asked if we think FSMA is driving strong food safety cultures. Our answer is: Yes, but there’s more to the story.

For the dozens of impacted families that advocated for years on behalf of the thousands of individuals who are sickened and die each year from foodborne illness, FSMA marked a sea change in accountability for preventing foodborne illness. And it demonstrated that the consumer voice can impact a Washington legislative process often perceived as impenetrable to the everyday citizen. It’s also true, however, that even before FSMA, leading companies had been implementing modern preventive measures in response to unacceptable illness outbreaks and consumer demands. And food safety thought leaders were writing about food safety culture and working to drive it. We thus see FSMA reinforcing the movement to strengthen food safety cultures rather than being the primary driver.

After all, a genuine food safety culture is as much about people and motivation as regulation. The people in food companies driving strong cultures are motivated at a personal level by knowing the severe harm deadly pathogens in food can inflict on illness victims and their families. And they are motivated at a business level by the realization that the success of a food company hinges on continuously meeting high consumer expectations for food safety. These personal and business motivations are the original and continuing drivers of strong food safety cultures.

The 2011 enactment of FSMA was made possible by the coming together of consumers, food safety experts, and industry leaders who agreed that application of the best available science to prevent problems is the responsibility of everyone. This agreement and the enactment of FSMA powerfully demonstrated how far our food safety culture had come since the uphill battles of 25 years ago over accountability for keeping E. coli O157H:7 out of ground beef and mandating HACCP for meat, poultry and seafood. There is now consensus that adoption of modern preventive controls is a basic responsibility of everyone producing food.

Food safety culture is about much more, however, than simply doing the basics of preventive controls. It’s about staying on top of change in the hazards that occur in our food system and in the means available to minimize them, and being committed to continuous improvement in response to these changes. FSMA took the breakthrough step of making continuous improvement a regulatory requirement by tying the definition of preventive controls to current expert knowledge about how to control hazards and requiring controls to be updated regularly as new knowledge emerges. In this way, FSMA reinforces the movement to strengthen food safety culture and makes it everyone’s responsibility.

But it all still comes back to motivation. Stop Foodborne Illness has long contributed to that motivation by sharing the stories of individuals and families who have experienced devastating loss and lasting harm from foodborne illness. Companies seeking to strengthen their cultures invite Stop constituents to tell their stories in employee training sessions and meetings with senior executives. In this new era of food safety, we see great opportunity to expand collaboration with food companies to help drive the widest possible implementation of best practices, continuous improvement and strong food safety cultures. In this effort, FSMA is our important ally.

Unannounced Audits: Are You Ready?

Many industries are moving toward unannounced third-party certification audits and the food industry is no different. If regulatory audits are unannounced, why is the food industry reluctant to adopt unannounced third-party audits? There are a number of benefits to unannounced audits—most importantly is their positive impact on a company’s food safety culture and how they prepare facilities to face FDA inspections.

Unannounced audits for food are required for many third-party certification audits. Typically, regulatory audits are always unannounced. Unannounced audits help demonstrate compliance and provide confidence to all stakeholders that your manufacturing sites are operating on the same GMP level, day to day, shift to shift, for every day your organization is manufacturing and distributing food products. With announced audits, companies tend to prepare for them before they occur. However, if there is a significant amount of difference between your sanitary operations prior to and during an announced audit versus normal operating conditions, you are sending your employees the wrong message.

Although there are differences between certification schemes, the GFSI third-party unannounced audits usually have a 40- to 60-day window in which the audit must be completed to allow the certification body to complete technical reviews and review corrective actions so that the certificate does not lapse. If it is a surveillance audit, then the audit is more likely to be truly unannounced, but a company still has the option of using blackout dates and the auditor will verify that the request was necessary. The bottom line is most companies have a certain timeframe when they know unannounced audits will occur.

Leonard Steed will present “Unannounced Audits: Are You Ready?” on November 14 at the 2018 Food Safety ConsortiumThe biggest impact on third-party audits is when the audit score is directly related to financial incentives for employees. This situation motivates employees to pursue activities to achieve the maximum score, not directly related to food safety. Activities may include significant audit preparation to eliminate or reduce GMP deficiencies, reduce or control the auditor’s access to records or areas of known plant deficiencies, “auditor shopping”, and to appeal any audit finding that lowers the score. Switching auditors or appealing findings can be legitimate tools to correct a system when auditors make errors in judgement or behavior. The activities to achieve the highest score should be reasonably governed because they could take away from the primary goal to operate in a food safe mode.

The goal of an internal audit program is to be compliant with regulatory inspections and third-party certification requirements and should therefore be risk-based. Determine what factors present the most risk to an organization and then align internal audits with those risks. At this point in time, being able to perform well on a regulatory audit should be a primary concern. Since the FDA and state regulatory agencies usually perform unannounced inspections, it would seem necessary to have your food safety plan, prerequisite programs and operations in a constant state of readiness to mitigate the risk of potentially unsafe food in commerce resulting in a recall.

One way to evaluate your food safety culture is to anonymously survey employees at all levels of the organization to gather information on attitudes and opinions about food safety and institute changes to improve your position. Another way is to initiate change by instituting unannounced audits on all manufacturing shifts and require participation by all departments in the audit function to move away from “QA-centric” food safety verification systems. The significant change is that all departments would be involved as an auditor and responsible for maintaining regulatory compliance. For some companies, the inclusion of all plant departments in the audit function has moved the needle in the goal to improve their food safety culture. To further define food safety culture in other terms, it could mean adhering to GMPs all the time, the importance of accurately completing and verifying food safety records, and fostering consensus between departments on the severity of food safety nonconformances requiring prompt corrective action.

Maintaining GFSI certification is an excellent way to achieve food safety requirements for compliance with FDA inspections. Although not specifically required by GFSI, another application of your internal audit program is to review your regulatory policy by performing a mock FDA inspection to identify any gaps in hazard analysis, identify preventive controls including the supply chain controls, accurately complete food safety records, and provide examples of corrective actions when preventive controls were not completed properly, and environmental corrective actions. If you decide to perform a mock FDA inspection of your facility, do not forget to include the FDA Guidance document criteria, as it is important to understand what the FDA expects to see when they are evaluating your implementation. Your internal audit program is a proactive program to note nonconformances before they become full blown problems, so don’t be afraid to use it to its fullest extent.

How We Use the Word ‘Recall’ Matters

“Recalls”. This topic got me thinking, what is the literal meaning of recall? So, I looked it up:

Verb

  1. Bring (a fact, event or situation) back into one’s mind, especially so as to recount it to others, remember.
    “I can still vaguely recall being taken to the hospital”
  2. Officially order (someone) to return to a place
    “the Panamanian ambassador was recalled from Peru”

Noun

  1. An act or instance of officially recalling someone or something
    “the recall of the ambassador”
  2. The action or faculty of remembering something learned or experienced.
    “their recall of dreams”

Many people think of FDA when hearing the word “recall”, and many consumers believe that the FDA often or even always orders recalls. In fact, the FDA relies on responsible parties to voluntarily recall food products when a threat exists, but FSMA’s mandatory recall authority allows FDA to mandate a recall only when the criteria under section 423 of the FD&C Act are met.

For most, the word “recall” is all too familiar. We hear it so often that I wonder if we are becoming desensitized to it. Almost daily we hear this item or that item has been recalled due to XXX, allergy, Salmonella, Listeria, foreign matter, and the list goes on. I counted 45 human and three pet food-related recalls just since May 1, 2018—that’s in just 84 days as I write this. So, for consumers (and we are all consumers), how do we hear the word recall and what is our visceral reaction when we hear the word? What actions if any do we take? Does it become too overwhelming? Are we becoming immune from the word? We are required to eat for survival sake and we don’t know if there is a problem with the food we are eating until after it has been recalled. At Stop Foodborne Illness, we send out recall notices every time there is a recall announced, which is typically a few times a week. Recently, a friend asked, “So, do I just quit eating to avoid contamination?”

I wonder if we can start a conversation about the term, how we use it and how to use the word and related action effectively. What does it mean for consumers? Is it only meaningful after the fact? The word and action of the word “prevention” is so much more powerful. Just “food” for thought.

The C-Suite: Showing up for Food Safety

It’s plain and simple: Having safe food, strong food safety programs, and ample resources allocated to them, are only possible (and sustainable) when company leadership make customers and consumers a priority.

Hence, a company’s food safety leadership, their departments and support will have experienced and knowledgeable staff, and access to new technology, best practices and collaboration opportunities. A long-view perspective means a better chance of meeting the bottom line—money saved, illness and possible lawsuits avoided, all while ensuring food integrity.

When you witness a company’s food safety leaders at important conferences, you can see their commitment to make food safety their top priority. But, when a CEO shows up to speak, listen and learn along with their food safety leadership, it is confirmation that they understand and care, or are there to learn. At national and international meetings, when they’re side by side with their senior staff, one can be confident that a strong food safety culture is a priority in their company.

Recalls and outbreaks will still happen,, but it’s been my perspective that food safety representatives who are absent at the food safety table may lack a commitment to a sustainable company-wide food safety culture and are subject to reoccurring and frequent recalls.

I applaud those C-Suite executives who show up, and are committed to hard work, research and collaboration, and sharing insight into their best practices! The list of great examples, of these kinds of companies and leaders, is growing.

The Role of Food Safety Culture in Regulation and Technology

The food safety challenges large food organizations face are often compounded by numerous factors, such as the number of different stakeholders (employees, suppliers, customers, etc.) disparate locations, changing menus and diverse operations.

Imagine a well-known quick service restaurant (QSR) chain with thousands of locations, whereby minimum age workers are on the front line of food preparation and sanitation. In these operations, the food safety culture and human behavior can potentially become compromised due to the complexity of the organization or attitudes of employees. The QSR is depending upon its managers to continuously train, monitor and record the proper food safety operations. Meanwhile, the global QSR brand depends upon a certain level of food quality and, of course, protection against a foodborne illness outbreak for its reputation and survival.

All food safety fundamentally revolves around individual human behavior. How behavior is managed, rewarded and recognized defines the culture. Commonly, human behavior is influenced and shaped by the surrounding social order. In order to develop a successful food safety culture, an operation must retain strong leadership, implement the standards of food safety processes from the top down, and invest in appropriate technology.

Regulation

The introduction of FSMA has brought both challenges and opportunities to the food safety industry. The requirement to document and record all daily HACCP operations and corrective actions of a food safety plan is one of them. Conceptually speaking, “you are only as good as your records say you are.” In this context, we are faced with both the challenge of maintaining a proactive and efficient food safety culture, coupled with the burden of increased regulation.

Typically, individual managers have responsibility for their locations and see to it that employees are following the safety plans via paper checklists. The plans themselves are printed paper logs attached to clipboards. Employees need to fill these logs out and update them continuously throughout the day. At the end of the day or week, the paper is collected, filed away and placed in storage. FSMA requires two years of this type of HACCP record keeping upon audit and, well, that’s a lot of paper, not to mention a labor-intensive process.

Technology

Employee behavior can be influenced, encouraged and monitored via tools such as mobile, cloud and sensor technologies. These solutions give large organizations greater visibility into their operations and increase the opportunities to train and coach employees on performance. Managers are free to concentrate on other issues, while employees complete food safety checks and build daily compliance records. Employees are prompted to follow safety plans, and technology can inform them of corrective actions and new requirements. Cloud technologies collect information in real-time and keep years of data, doing away with clipboards, pens and paper.

The growing adoption of technology is the fundamental turning point that can help drive human behavior and food safety culture in a positive direction. Fortunately, we live in the information age with modern means that allow for increased visibility and control. Technology can assist in the development and maintenance of larger food safety cultures.

Within the contemporary IoT (internet of things) environment, human behavior can be shaped by the resources available in today’s food safety tool box. Bi-directional wireless communications and digital record keeping merges and unites the individual into the larger collective culture. We are now seeing the advent of sensor technology as a “first wave” of prevention/ detection of environmental conditions that foster foodborne illness.

A Culture of Food Safety Technology

The future state of a business culture that pays attention to food quality and safety looks decidedly different than those of the past. Each day an employee logs into a store’s mobile device using their credentials. The cloud synchs with the device, the user is identified, and the daily checklists arrive. The employee is on the clock and she has her tasks and timelines for food and safety operations for the day. She is reminded of tasks that need completion and even scored on how well she performs. Managers have real-time visibility into her performance and are offered teachable moments for training and improvement. Managers, employees and stores are all held accountable.

Imagine temperature and humidity sensors in freezers, coolers, holding bins and storage areas. These sensors act as the first line of defense as they sample the environment on a minute-by-minute basis. The sensors send SMS / e-mail alerts to the appropriate stakeholder that something could be wrong. The employee receives the alert and is assigned the task/checklist/corrective options needed to respond. The information is recorded and synchronized in the cloud for reporting purposes. Follow up on checklists can be routed to other stakeholders through the cloud.

Human behavior will never be replaced when it comes to food safety, but it sure has gotten better, faster and easier with new technologies.

Minimize the Risk of Pests by Maximizing Your Staff

If you were given the option to run a long-distance relay race, would you select four runners to split up the distance or would you choose to run it alone? That’s a no-brainer—you’d pick four runners to give yourself the best chance of success every time!

Apply the same mentality to your food safety program, and (by extension) your pest management program. The only way you’re going to be able to effectively monitor an entire facility is by establishing a team to help. Otherwise, that’s a lot of ground for just one person to cover.

As a food processing facility, you probably already have an integrated pest management (IPM) program in place. But does your staff know the telltale signs of rodents or stored product pests? Would they be able to spot cockroaches crawling around in your facility’s storage area? The earlier you can spot a pest problem, the quicker it can be resolved before it turns into a major issue that could prove costly.

Staff training is the best way to get everybody on the same page when it comes to pest management, because pests are great at hiding and living in hard-to-reach locations. It takes a trained eye to spot certain pests, and informed employees can be a great help to this.

Before you begin staff training, you will want to identify all of the areas both inside and outside of your building that are at high risk for pest issues. Schedule a meeting with your pest management provider and make note of the high-risk areas and the most common pests your facility may be prone to. Once you’ve determined these high-risk areas and the best tactics to protect against them, employee training is a logical next step.

The bigger your facility, the tougher it is to manage all of the different potential hot spots. Everybody knows this, but few consider what this means for their pest management programs. Creating an educational pest program for employees is critical to protecting your facility. The employees are on the ground level and are often the most likely spot the early signs of a pest problem.

Step 1: Start with the Basics

When beginning staff training, make sure employees understand the IPM program in place and how it works in your facility. Many pest control providers offer complimentary employee training, so reach out to your provider about on-site training sessions. As employees learn more about what each tactic does to prevent pest issues, they’ll get a better understanding of why pests get into the facility in the first place. Once informed, they can use this knowledge to help reduce potential risk factors such as standing water from a leak, food waste in processing areas and waste removal.

Here are a few telltale signs of some common pests:

  • Stored product pests: Though generally tough to spot, there are some common telltale signs you can spot on products like webbing, larvae, live adults—some of which can look like grain products—and, of course, damaged packaging.
  • Flies: If you see larvae (maggots), especially around drains and in other damp or wet areas, it’s time to act fast. Flies reproduce quickly, so small problems can escalate rapidly.
  • Cockroaches: They can be found behind or under equipment, wall voids, or any other protected area. Cockroaches will take advantage of nearly any food source!
  • Rodents: These pests leave droppings constantly, so watch out for tiny pellets. Rodents are constantly gnawing, so if you see any products with gnaw marks, that’s a good indication that rodents may be present.

A pest management provider can identify what challenges are unique to your facility and which areas are most likely to experience pest activity. Employees are going to be a crucial part of this process, so they will need to know where to look.

Step 2: Designate Roles

Employees are the eyes and ears of your business. Whether it’s pest problems or any other issues at your facility, your staff is probably going to notice issues before management does. Once they know the pests to look out for, they can also keep an eye on:

• Cracks and openings: Any opening that leads from the inside to the outside may allow pests in.
• Sanitation issues: From large bins of food waste, to break room trash cans, let them know to report when these are overflowing or need to be cleaned.

The key is once employees know what to look for, they need to know how and who to report it to. Make sure there is a pest sighting log and employees know where it is and what information to record.

Step 3: Emphasize Communication

Communication is key. We all know that. Which is why it’s so important to encourage the age-old adage when it comes to potential pest problems: “If you see something, say something!” The longer a pest issue persists, the more likely it is to turn into a costly, potentially hazardous infestation.

Consistent communication between employees, management and pest control providers benefits all parties. It ensures employees are in-the-know about important information and new initiatives while making it easier for managers and pest control professionals to stay a step ahead of invading pests. Designate a point person that employees should go to if they have something they want to talk about and make sure to utilize that pest sighting log!

Open dialogue makes it clear to employees that they are a contributing part of your IPM program. Your employees serve as the first line of defense against pests, so if they see pest activity, it’s incredibly important they feel comfortable escalating it immediately. Tell employees you want and need their input in order for your pest management efforts to be most effective. And don’t forget to solicit feedback—they might even have ideas on how to make the program better!

Step 4: Establish a Pest-Sighting Protocol

There needs to be a clear course of action for any employee who notices a pest or evidence of pests within your facility. You’re in the business of protecting your products, and many pests spread dangerous pathogens everywhere they go.

Establishing a protocol for reporting pests will keep things simple for both employee and manager, as it ensures pest problems are documented and action steps are clear. Should a pest be spotted, make sure employees know to do the following:

  • Capture pest(s) for identification if possible. Take pictures if you can’t. The better a pest management professional can see a pest, the more accurately they’ll be able to prescribe a solution.
  • Fill out a pest-sighting log and note when, where and how many pests were seen. Imagine this as a crime scene, and your pest management professional is the crime scene investigator.
  • Contact management if the issue is severe and needs immediate attention, at which point management should contact their pest management professional. The sooner everyone is on the same page, the quicker you can implement a solution to help prevent pests from compromising your products.

Even the best IPM program can’t keep out every pest trying to get into your facility, which is why it’s so important to establish a pest-sighting protocol. It might also be worth forming an IPM committee to meet on a monthly basis. It’s best if this committee includes members from each department and, if possible, the pest management professional in order to promote ongoing improvements.

Step 5: Ongoing Education

Once you’ve taught your employees the basics of how to spot pests, pest evidence, and how to proceed once they see any, training should not stop there.

Although pests stay relatively the same year to year, your facility won’t. Staying up to date with the latest information can help you proactively prevent pests before they become a threat to your operations. Review monitoring reports with your pest management professional to determine if changes need to occur to focus on new areas, or redouble efforts at a hot spot that hasn’t been resolved yet. Remember: Many pest issues take time to completely manage.

Ask your pest management partner for tip sheets, checklists and other educational materials to stay current, and share them with your employees. Also, keep in mind that different pests thrive in different weather conditions, so adjust your tips for employees seasonally so they know what to look for.

With all staff members consistently armed with the necessary information to help identify hot spots and minimize the risk of pests, you’ll be in great shape for your next audit. Just make sure to document everything being done to help proactively protect products. You’ve got to have proof of your efforts!

Six Best Practices To Make Audits Stress-Free

Your next audit is already on its way. Now that many regulatory bodies and certification agencies are no longer required to give you a heads-up about upcoming audits, it’s completely up to you to stay on top of compliance, recordkeeping, and a myriad of other tasks on a day-to-day basis. And without that buffer of warning from auditors, falling behind can be more detrimental than ever.

Let’s walk through some effective practices that keep you ready for an audit at a moment’s notice, make the process go smoothly once the auditor arrives, and get rid of some unnecessary stress all along the way.

Connect All Departments to an Online Database

When it comes to collecting and moving data from one department to another, there’s nothing as inefficient as disconnected documents. Not only are they a strain to keep organized in big filing cabinets or file folders, but they take a long time to create, share and edit. It seems cliche to harp on this point in 2018; yet, many food safety coordinators have a purely manual system.

By connecting your entire company to an online database, you enable different departments to organize, share and update documents in seconds, rather than minutes. This level of connectivity can shave time off dozens of tasks per day, which ultimately leads to hours or days of extra productivity over the course of a year. When you adopt a system that updates connected documents in real time, you won’t have to make manual changes to multiple documents for small changes.
If you want to get extra efficient, the real trick to this best practice is to find software that you can incorporate into every department. Then, as people go about their normal jobs, the information they collect is automatically uploaded to the central database.

Utilize the Internet Of Things to Streamline Data Collection

These days, it’s possible to connect almost every piece of equipment to the Internet of Things. Even if your machinery doesn’t have measurement tools built-in, there are almost certainly additional tools you can install to create that functionality.

Having your equipment feed data directly into your central database is faster than manually collecting information and eliminates the risk of human error when it comes to data entry. Thanks to that simple degree of automation, already standard in large parts of the global economy, you can also use system dashboards and alerts that let you know when something’s off, like the temperature in the freezer or the production speed of equipment on the floor.

Don’t Settle for Uninspired Internal Audits

Many food safety coordinators are so focused on specific issues that they forget to take steps back to look at the situation from a bird’s eye view. When the time for an internal audit comes around, they do it with one eye on the audit and one eye on the next fire that needs putting out.

Lazy internal audits are not only noticeable to external auditors, they keep you in the dark about what’s really happening in your facility. Here are a few ways you can ensure your internal audit empowers you rather than slows you down:

  • Schedule the internal audit ahead and make it immovable
  • Plan out your scope, objectives and process to establish momentum and direction
  • Dedicate your full attention to running the audit and managing relevant staff
  • Report your findings in detail and discuss with necessary employees
  • Schedule and verify corrective actions

A well-performed internal audit is a powerful way to regroup, refresh goals and stay on track.

Train All Employees for Go-Time

Do you know which employees an auditor is allowed to interview? Any of them. No person is disqualified from interviews, which means every employee needs to be well trained on food safety procedures. While most facilities only train employees until they know the basics of food safety for their department, going above and beyond here can have some major gains.

Consider the perspective of the auditor. When they are asking your employees questions, they’re not just trying to complete a basic inspection. They want to see signs that you haven’t done the bare minimum, but that your employees are immersed in a food safety culture, that they have been receiving training long-term, and that food safety is a fundamental value of your company.

When auditors get the sense that your employees are up-to-speed, things tend to go a little smoother, stress levels lower, and the auditor becomes less suspicious.

Give Food Safety Coordinators the Appropriate Authority (and Budget)

One issue that many facilities run into is an unempowered food safety coordinator. When that person discovers ways to improve or correct operations or employees that are not following protocol, he or she is often unable to take the appropriate action.

Hazards aren’t the only things that need corrective actions from time to time. Sometimes employees need to face consequences for compromising the production area with food or for haphazardly completing safety-related tasks. Other times, employees don’t have the necessary software or equipment to perform their job well and even though their managers may be aware, they don’t allocate the appropriate budget to improve the situation. In order for any company to thrive, standards must be enforced by relevant leaders; and there’s no one better to call the shots on food safety than the designated coordinator.

Establish a Company-Wide Food Safety Culture

When it comes down to it, companies that value food safety thrive. Companies that consider food safety an annoying task to check off the list—they’re the ones that run into extra trouble.

Building food safety into your company’s system of values starts at the very beginning with how you train your new hires. It continues on into how you provide ongoing training even to experienced employees. It’s not an item on the list of meeting topics; it’s a value that underscores the entire agenda.

In order for this approach to be successful, it has to start at the top. Facility owners and managers that value food safety will organically pass that on to the people below them. But when the upper levels can’t be bothered with food safety, the entire organization struggles to hold onto it as a value.

Advocate for Change to Establish a Food Safety Culture

Many times food companies will simply say, “We have to change our culture” or “We’ve always done things this way”, but this attitude will not remedy potential outbreaks or help develop food safety protocols.

As author and businessman Andy Grove once said, “Success breeds complacency. Complacency breeds failure. Only the paranoid survive.” This statement could not apply more to the food service and manufacturing industry.

The first step to change is convincing your organization from the top down to buy in; getting your executive team to accept the cultural change from manual paper-based approaches to digital food safety is paramount.

Common objections will be the investment and positive record of accomplishment. Taking a proactive and preventative approach to everyday food safety compliance will have a positive ROI over time while ensuring the utmost brand protection.

Presenting the potential damages of being linked to a foodborne outbreak is a great place to start. It typically will open the eyes and slightly intimidate each audience member. After all, executives and board members do not like to hear “profit loss”, “stock plunge”, and “tainted brand image”.

While this can all seem overwhelming, it does not have to be. Preparing a strategy and evaluating the processes needed to fulfill this goal will help alleviate the red tape to get this off the ground.

However, before we prepare a strategy, it is important to understand the basic premise behind food safety and how technology can enhance it.

In essence, food safety fundamentally revolves around individual human behavior. Human behavior in turn, is largely driven by culture. In order to successfully develop a food safety culture, an operation must possess impeccable leadership and incorporate the highest standards of food safety.

Most notably, the HACCP plan and individual processes created are a reflection of the human behavior that shapes and molds the culture of an organization. In large organizations, the challenges are often compounded by an increased number of locations and stakeholders (employees, suppliers, customers, etc.) Within these operations, food safety culture and human behavior can potentially become compromised due to the nature of the organization, or attitude and work ethic of the stakeholders.

Technology can assist in the development and maintenance of larger food safety cultures through the use of extensive and dynamic procedures. Human behavior can be shaped by the resources available in today’s food safety tool box. We can now overcome the arduous “pencil whipping” of safety checklists via handheld, wireless and cloud-based technologies. Such technologies are ubiquitous today in the form of apps downloaded from the internet, cell phones, reporting platforms and omnipresent communications.

History has shown that in challenged cultures, individuals often behave as though they are not a part of the whole, and operate as one, rather than as a team that is linked together under one vision and shared effort. However, during the processing, handling and storage of food, we need all stakeholders to act as a collective operation and function as one. The growing adoption of technology is the fundamental turning point that can help drive human behavior and food safety culture in a positive direction.

The introduction of FSMA has brought both challenges and opportunities to the food safety industry—the requirement to document and record actions of a larger food safety plan is one of them. Conceptually speaking, you are only as good as your records say you are. In this context, we are faced with both the challenge of maintaining a positive and efficient food safety culture, in addition to the burden of increased regulatory compliance.

However, FSMA and the innovative technological era have guided the industry to a crossroads of sorts. I suggest embracing the FSMA mentality and implementing food safety technology into your operations. This will not only protect and preserve your organization, but perhaps more importantly, it will define your food safety culture, and implement a positive change into your brand.

Sharing Food Safety Stories Around The World

Last month, I spoke in Santiago, Chile at the Inofood Conference. I spoke about the impact of foodborne illness in the lives of individuals and families.

I showed photos of little Reese who died two years ago and talked about how Stop Foodborne Illness works with the food industry to drive home the importance of food safety and the consequences of foodborne illness. Together, we work to raise awareness, create and sustain strong food safety cultures and to promote the importance of food safety.

Deirdre Schlunegger will be speaking as part of a panel of experts during the Food Safety: Past, Present & Future Plenary Session during the Food Safety Consortium, November 29th at 4:00pm.

I was in good company with Frank Yiannas as he spoke of food safety culture and his book was even translated into Spanish for this conference. Tim Jackson from Driscoll’s and DeAnn Benesh from 3M addressed technical issues related to food safety and many others spoke. Food Safety representatives from Chile and around the globe were very interested and are dedicated to the topic and practice.

I am proud that we are among the nonprofit, behavioral and scientific experts and making a difference as food safety culture, tools, data and interventions improve. I have already been contacted to see if the video, which I showed in Spanish, can be used throughout Chile in the coming months.

Just a few days following his conference, I was in Greenbelt Maryland attending the JIFSAN (Joint Institute of Food Safety and Nutrition) Conference and Advisory meeting as I serve on the Advisory Council. The topic was Risk Analysis Tools and Data and it was a fascinating two days. Again, professionals who teach and share food safety knowledge around the world gathered to share vision, tools and practices.

The 5th Annual Food Safety Consortium conference will take place November 28 through December 1st and we will be there! We continue to see a strong drive and desire to improve food safety and we need to continue to press until the estimated number of people who die each year from foodborne illness diminishes significantly from 3,000 towards zero. No one should die from nourishing their body with food.
