Jordan, this was fascinating information. Recently, there was a hepatitis A outbreak at a local restaurant AND a nursing home. Turns out the same person worked at both locations. I don’t know if these standards helped, but it’s good to have a computerized record of things in case someone does get a food related illness. I don’t run a restaurant (although I worked in one for several years), and I feel a bit safer as a consumer knowing these things are in place.
